INSANE Chocolate Chip Peanut Butter Cookies

There are so many recipes that will claim to be "life-changing," but these cookies actually are. They are sugar free and flourless. Not only do they sound like they'd be pretty healthy, they also have such a short prep and cook time.


Ingredients:

1 Cup of Organic Peanut butter (sometimes I like to use crunchy almond butter though)

1/4 Cup of pure maple syrup (I like to use Lakanto's monk fruit sweetner maple syrup)

2 Eggs

1/2 tsp baking powder

1/2 tsp baking soda

1/2 cup (or however much you'd like) of sugar-free chocolate chips. I like to use Lily's baking chips.

1 tsp of flax powder

  1. Preheat oven to 350F

  2. Mix all the ingredients in a large bowl. The consistency will start out very watery but become more gooey as you mix.

  3. Line a tray with parchment paper and spoon the mix into a cookie shape on the tray. Try to keep enough space in between the cookies because they expand a lot.

  4. Bake for about 15 minutes, until they are golden brown.

  5. After taking them out of the oven put them right into the fridge. They can be stored in the freezer if not eaten within a few days.

Sometimes I'll eat this cookies straight from the freezer and they're amazing, or I'll heat one up. I love this recipe because there's no refined sugars, only natural (maple syrup and lily's chocolate chips). I'm super sensitive to sugar, I'll either bloat or get super itchy right after eating it, but these cookies are perfect to satisfy my sweet tooth without being too sweet.
